What happens when a beloved local food chain decides to take on the nation? That’s the story of Portillo’s, a fast-casual restaurant born in a 12-foot trailer in suburban Chicago, now aiming to scale across the U.S. with some of the highest sales per store in the entire restaurant industry.


Portillo’s is a small, Chicago-based restaurant chain with fewer than 100 locations, yet it generates more revenue per restaurant than Chipotle, Chick-fil-A, and even McDonald’s. How is that possible?
